If it is cold outside, we will make lentil soup! The lentils from Linosa are grown in the fertile volcanic soil of the island. They are cultivated exclusively by hand and without the use of medicines or fertilizers.
They are sown at the end of November and harvested at the end of May. Once harvested, they are threshed – the winnowing and drying in wood-fired ovens is carried out only by expert hands, otherwise the lentils could be seriously compromised –
and, at the end, cleared of straw residues, grass seeds and stones – all of which is done by hand, making it easier to find these residues.
Given the small quantities produced, it is difficult to find Linosa lentils outside of the island.
