Rice sfinci

A traditional winter sweet in Messina is the rice sfincia, which are pieces of fried raised dough. Simple and delicious, the rice is boiled in milk with added orange peel until the liquid is completely absorbed. Afterwards, the cooked rice is sweetened with a little sugar and kneaded with flour. Small sticks are shaped out of the dough, which are then fried and served with honey or sprinkled with sugar.
